Sweet Potato & Turnip Mash

I threw this side dish together for a football-sunday BBQ with the root veggies that appeared in my produce box a few days before. I was so thrilled to get sweet potatoes I had to share, but realized when I started peeling that a pound and a half really isn’t much. So in went the turnips and then the cheddar, and what started out as a very simple side dish mash turned into a seasoning and tasting experiment. But how far wrong can you go when there’s truffle oil involved? not wrong at all!

1lb Turnips
1.5lbs sweet potatoes
1 tbsp cumin
lots of salt and pepper
1/2 to 1 cup sharp cheddar
small drizzle of truffle oil

Peel and chop your roots into similarly sized pieces. boil both (if your chunks are the same the turnips will take a bit longer) until tender, rinse with cold water to stop cooking and drain. while still quite warm add the cumin, salt and pepper and begin to mash, I used a hand masher. Once you start to get the same consistency throughout add the cheese and thyme and start to taste, adding flavors as necessary. just a small drizzle of truffle oil with the last bit of mashing will really kick your mash up a notch and make your guests swoon!
